Highlights

Here goes my highlights for this week.


A little Tuesday night visit to this place.

Getting lost (again) at this beautiful park:


Recreating my fav meal from My Fit Foods, Lemon-pepper turkey!


Brown lean ground turkey
Add LOTS of lemon pepper, fresh spinach, black pepper, fresh lemon juice
Serve with brown rice and baked zuchinni!

And my newest concoction:

Ta-Da! Okay, I'll admit is doesn't look that appetizing (maybe even not at all) but it was still pretty awesome.

Preheat oven to 350
Cook 2-3 eggs (I used 2 egg whites and 1 egg). Leave them a little runny.
Spray pan with non-stick spray.
Put whole wheat torilla on pan.
Spread salsa on whole wheat tortilla. (This is the pizza sauce.)
Add eggs on top of salsa.
Add cheese (I used jalapeno jack) on top of eggs.
Bake for 10 minutes or until cheese is melted and tortilla is a little cripsy.
Enjoy!

Thankful Week #6

Always so much to be thankful for.

....running partners. (and no, I'm not talking about Levi. He sucks lately) Since joining my running group, I've really enjoyed running again. I run alone on the weekdays and I really push myself so that come Saturday morning, I can keep up with whoever my running buddy/buddies are. Yesterday, it was just my friend Danielle and I. We chatted the whole way and knocked out almost 6 miles in no time. I had a blasty.

....naps. (Levi happens to be the BEST napping partner, which is great since The Coach is not a napper). This weekend I've been exhausted and to date, I've taken 3 naps. Two naps yesterday and one today. Bliss.

....Church. We finally made it out this morning and I'm so glad. My Sunday is always that much sweeter when we start it out with the word of the Lord. :)

....family and friends. Loved seeing all the ladies at the house on Friday.

It's a par-tay!

Welp, I can officially cross my off my number one goal for the month of August: host a dinner party/game night. :)

Last week, we hosted Alan's birthday din-din and on Friday I hosted a Scentsy party. My childhood bestie asked me to hold it, and since I'd never done anything like that, I gave it a shot. It was fun to get the ladies together again and snack on yummy treats.

Since the party was pretty light, I decided that bite-size finger foods were appropriate. I made up some turkey and cilantro meatballs and some scones (I decided to make the scones the shape of cookie at the end of recipe since I was running short on time. They looked a bit funky, but were still pretty delish.)

Southwest Turkey Meatballs with Creamy Cilantro Dipping Sauce
Gina's Weight Watcher Recipes

Servings: 12 • Size: 2 meatballs only • Old Points: 1 pts • Points+: 2 pts
Calories: 67.1 • Fat: 1.8 g • Carbs: 2.3 g • Fiber: 0.4 g • Protein: 10.5 g

1-1/4 lbs 99% lean ground turkey
1 jalapeño, seeds removed (leave some in for spicier meatballs)
2 cloves garlic
1/4 cup chopped fresh cilantro
3 scallions
1/4 cup seasoned bread crumbs
1 egg
1 tsp cumin
pinch oregano
salt and fresh pepper
cooking spray

Lightly spray baking pan with oil.
Preheat oven to 400°.

Place jalapeño, garlic, cilantro, and scallions into a small food processor or chopper and
pulsea few times until finely minced.

In a large bowl
combineturkey, chopped herbs, bread crumbs, egg, cumin, salt and pepper. Using your hands,
mix welland measure 1/4 cup meat, then
divide in twoso you end up with each meatball 1/8 cup in size.
Roll and place on a baking pan.

Mom brought the veggie tray (which I've snacked on all weekend) and my grandma brought the cupcakes. Yum! I ate 2 this weekend before sending them off to where my sweets go to die... the Coach's field house. If they were here, I'd seriously eat them all. When I sent them off with The Coach this afternoon, I asked if the other coaches ever bring in leftovers from their house and he said yes. Glad to know I'm not the only crazy wifey who wants certain things out of the casa!

Hahaha, no one agreed on the public bathroom one or that some of the samples had "after smells." I'm sticking to it, though.

A day of firsts

and fails.

This morning started off around 4 AM when I awoke to a crazy pain in my left calf...charley horse. I nearly cried. The pain lasted a minute or so before I was able to go back to sleep. When my alarm went off to tell me to go to the gym, I will still in such pain that I didn't think a workout would be a smart idea... so i skipped. I hate those days. Boo!

Work was ca-ray-zee, but I powered through it! It's like we are starting a football program from the ground up or something!! ;)

I wasn't able to leave work in time to make my bodypump class so I opted for plan B, trying a new grocery store and sploring (that's how Alan and I say exploring when we are referring to Levi) the park by our house.

First up was the store!


This place recently changed ownership and I had been wanting to check it out. It was pretty average. Some prices were more expensive and some were less, but the veggies looked pretty fresh and really that's what I was going for. I got the use-several kinds of greens, onion, alvacado, strawberries, almond milk, feta, etc..

Some yogurt covered pretzels may have fallen into my basket near the checkout. And I might have munched on a few on the car ride home... ;)


I also got some coconut waters. They're loaded in potassium, which my body's lack of may be a reason for this morning's charley horse fiasco. (naturally, the Google queen worked her magic). I don't know if that's the true cause of the pain or if it's my recent increase in running. Anyway, can anyone drink that stuff without making a sour face?! I know I can't. I don't hate the stuff but I DEFINITELY don't love it.

Here's a look at the goods:



After the store, I picked Levi up to head to the park.

He reeeeaally enjoyed the car ride there.

At first, we just drove around sploring from the car. Then we hit the dog park. Eh. 3 dogs, 300 tennis balls. Levi played for about 10 minutes before I got bored. (I couldn't get him to climb on anything or jump through a loop. Lame.)

Next, we drove to a different part of the park for what I thought would be a nice, long run. Fail. The trail I picked was rocky, steep and unpaved.

I wasn't aware I needed my mountain bike and hiking boots for this.




We did about a 20 minute walk before I was ready to leave. Levi was fading, the trail sucked and I felt lost since I didn't know where any of the billizon trails led to. The evening had not turned out like I thought it was going to and I was ready to be home in the AC (although, since most of the park is covered in trees, it really wasn't that hot!). Levi was ready to go too.

You can't tell from this picture, but he got his nasty dog slobber ALL OVER MY CAR.. AND MY LEG!

When we got home, I wasn't very hungry so I made myself a quick salad and it turned out being one of the BEST salads I've ever had. No joke.

[Contains: 3 kinds of greens, tomato, green bell pepper, feta, olives (added after pic), tomato and basil almond slices, craisins and shrimp, I used olive oil and lemon juice for dressing,] Perfection. :)

Well, the Coach just got home (football 2-a-days make for crazy hours) so I'm going to make him a similar salad to eat during our daily episode of FNL. I think a few strawberries dipped in dark chocolate are callig my name too.

Thankful Week # 4

I know I'm a little late on this one, but it fits in perfectly with a recap of today... I promise!

Today started off like any other morning. The alarm went off at 5 AM, Levi insisted on me getting up, I finally gave in around 5:15 and he stayed in bed. Punk. (He didn't even budge when I went into the kitchen or see me to the door as I left!) I conquered a bodypump class early, which I'd never done before. I accidentally slept through last night's class... If I was that tired, though, I figured working out probably wouldn't be that effective anyway.

After the gym, I got ready for work and ate one of my favorite breakfasts, oatmeal with a tablespoon of peanut butter. Bliss. I also sipped on some coffee with almond milk and cinnamon. I'm not much of a coffee drinker, but today I couldn't resist. (I'm more of a hot green or black tea with honey kinda girl)

Work was busy and I got a ton done. I'm totally a "to do" checklist person, so I made my list and impressed myself as I marked each project off the list one by one. Score! Then later in the day (and this is where the thankful post ties in), my boss gave me a blank envelope and told me to open it. Turns out....drum roll please..dummmmdummmmmmmmdummmmmm.......... I got a raise! whooo hoooo! I truly am thankful as I did not see it coming. Really, I was completely blindsided, but in a good way of course ;)

And that leds me to the rest of this post. So here is what I'm thankful for this week.


...the raise! Duh! I think I already said that but it's worth noting again. It's not just the money that is awesome. It's the fact that my bosses noticed my hardwork this past year and rewarded me for it.


...two great workouts (well, three if you count the 2 mile walk that Levi and I just got back from). I conquered both bodypump (AM) and spin (PM). Spin class was waaaayyy sweaaaattttyy today, my favorite kind of workout. :)

...the show Friday Night Lights. Ummm..it's okay to be thankful for a show, right? ;) Besides being completely awesome and addicting, I love the fact that the Coach and I watch it together since we both LOVE it. As lame as it is, we both look forward to watching an episode a night. I don't know what we will do when we finish all the episodes on Netflix. It will be a sad day, that's for sure.


...a husband that says thank you. It's always nice to hear he's appreciative and notices the small things. Keeps me trucking along every day.

...family. I had such a great time with everyone over the weekend at Alan's birthday get together. i just love hosting little parties like that. Can't wait to have a big house to hold lots of parties and dinners at someday.

...comfort food. Yep, dinner tonight was simple, but a classic. You can never go wrong with good 'ol spaghetti.

Alan turns the big 2-6

Hard to believe, isn't it?


But yes, this sexy guy is officially old.

Friday was the Coach's actual birthday, so naturally we went all out. Yep, pizza, ice cream and Friday Night Lights on Netflix. You can't slow us down! ;)


If it looks good, it's because it was! (Thank goodness for my smoothie breakfast and salmon salad for lunch!)

Saturday started off early with a 4 mile run with my marathon training group...shout out to Team NEISD! It was great! I followed the run with breakfast (greek yogurt..with a little honey, granola, and mixed frozen barries), cleaning, cooking and some more cleaning and cooking. Alan had to work all morning. Get it, two-a-days!



All the cooking and cleaning was for a little par-tay for the birthday boy at our casa. Family and friends piled in our tiny house to eat, drink and be merry!


I was so proud of Levi for behaving so well. He even found him a new best friend....

And there was cake, lots of cake. I had some at the party and again on Sunday before packing it up and making Alan take it up to the coaches at the school. Out of sight, out of mind.


After everyone left, Alan, mom and I went out with some friends and we ran into this girl.


Had it really been a year since I'd seen her? That's pathetic. It was great to see her. Jordan was there too, but we didn't snap a picture. That's pretty pathetic in itself too. Fail.

Sunday consisted of sleeping, eating, FNL, and a little shopping (yay for 2 new pairs of running shorts and a tank top!)

Levi was definitely worn out too.


Why do dogs look like such angels when they sleep? So darn cute. Sighhhhh.

I'm throwing in the apron

seriously. I give up.

Over the years, I've attempted and completely butchered everything I've tried to bake. For someone who loves sweets so much, I sure suck at making them. I'll call this a "blessing in disguise" since I can't even imagine the amount of sugar I would consume if I was a stellar baker.

My last attempt was on Friday when I tried to make gluten-free chocolate chip cookies to take to the coaches' party. Ashley does the gluten-free thang so I thought I'll be nice and go that route. Fail. Ash, do I still get brownie points for trying?! Apparently GF flour is NOT the same as regular flour and the consistancy was totally off. Since the batter tasted okay, you better believe I ate some (okay, a ton!) of that batter, I figured I was on my way to success. When I put the cookies on the cookie tray I knew I was in t-r-o-u-b-l-e. They literally spread out covering the entire sheet in a matter of seconds. Check it out.


and that was after being in the oven for FOUR minutes

Needless to say, these bad boys did not see the light of day. I'll stick to making smoothie creations like this one:


It's a chocolate strawberry ice cream smoothie. Contains: almond milk, frozen strawberries, cocoa powder, protein powder and ice. I added chocolate syrup on top for an extra kick. They were delicious and Alan and I scarfed these down. And, I may or may not have finished off the pitcher for breakfast in the next morning ;)

I'll definitely be making these again. Super easy. WIN!

Week's Worth of Workouts

Monday: Bodypump
Tuesday: Yoga AM, Spin class PM
Wednesday: 50 minute elliptical interval workout + abs
Thursday: Bodypump
Friday: 30 minute interval run on treadmill + 20 minute elliptical + ab work
Satuday: 4 mile run (first run of my half marathon training!)
Sunday: We'll see what I get around to today. bodypump and yoga are on my mind. (but so is a nap!)

thankful week # 3

All and all, it was a good week! :)

This week I'm thankful for...

...new found motivation. I've been waking up early every morning to workout and am loving it. I've learned to love leaving the house when it's pitch dark out and I'm the only car on the road. It gives me quite a sense of accomplishment to be done with a workout by the time the sun it out too. (I've ended up working out twice a day now since I can't part with my group classes at night. This wasn't my orginial plan but I'm liking it.)

...a homecooked meal. Not that I don't cook one every night, I just really appreciate when someone else cooks for a change ;) Alan and I went over to the Hill g'rents on Wednesday for dinner. I loved that his grandma made tons of appetizers and dessert even though she knew it would only be the 4 of us. Totally something I would do!

...a new fence! The new panels may not match our old fence, but at least we have one again! Now if only our backdoor was fixed. (Long story short, the new door doesn't fit the old frame so opening and closing the door is currenty not an option. At least, we have a door... well, more like a wall at the moment.)

...the annual Churchill football party. I love seeing all the coaches and their wives. It really gets me excited for the season, especially since I'll be able to go to more games than I have ever this season. Yay!

Oh, August

I can't believe August is already upon us. Where did June and July go? In honor of this new month and the soon transition from summer to fall (although we all know it will be 100 degrees until Novemeber) I thought I'd post my goals for this month. So here goes...

5 Things I want to accomplish in August:

1. Host a dinner party/game night


Ironically, I was asked to host a Scentsy party this month. I've never hosted a party like this before and was a little skeptical at first. After some thought I decided to go for it, what the heck! If anything, it's a great way to gather up the gals once more before school (and more importantly FOOTBALL) starts back up and to munch on some good eats!

2. Increase my yoga practice


I recently started practicing in the wee morning hours before work. However, my frequency could definitely use a boost. Here's to more downward dogs and warrior 2s.


3. Start scoping out a new pair of jeans for fall.


What girl doesn't need a new pair (or two) each fall? ;)

4. Eat more fish (or take a supplement)


I love fish and it's so easy to make. Eating it should be a no brainer. Operation eat more fish begins now!

5. Attend church more regularly.


This summer has pulled us in so many different directions that we sadly only make it to church about once a month. That routine needs some serious improvement. Sunday at 9 AM, you know where I'll be!

Weekend Shenanigans

Hello there! How was your weekend? My weekend was great. Here's a recap of what went down...

Let's first start with my "what I'm thankful for" weekly post that I skipped out on on Friday. Whoops!

THANKFUL WEEK #2

...finding the energy to get up early and workout. I went to the gym several times, did some yoga at home and yesterday ran 4 miles with Levi. The energy level I maintain throughout the day is what keeps me going. Early morning workout mission week 2 starts tomorrow.

...a helpful husband. The coach cooked dinner on Wednesday. And, although I told him exactly how to make it and provided him with a unless recipe, he still did it! Yay! He has also been super helpful with doing the dishes, his least favorite chore. Ironically, as I type this, he is painting our back door. Whoo hooo!

...my sweet puppy dog. I woke up from a nap today to find Levi's head resting on my shoulder. I love when he is sweet and snuggles.

...a new grocery/meal plan. I talked about it last week and it is going really well. I'm already planning meals for next week and we haven't finished half of this week (we ate out friday and saturday).

...my mother-in-law for spoiling me rotten. More on that later. :)

FRIDAY NIGHT

Alan and I went to a burger joint down the road called MoMak's. I'd been wanting to try it for a while. It's literally within walking distance of our house (but naturally we drove there!) and always looks hopping when we pass by. When a Groupon appeared offering a great discount, I knew it was fate! Overall review: average. We sat outside and watched the kiddos run around (adults were probably outnumbered by them!) while we ate. The burger was good, not great. It was definitely no Big'z, which is totally my new burger place obsession. Ah-mazing!

After din-din, we came home and just chilled at the house. It was nice to relax. I was exhausted from the week.

SATURDAY

Levi and I got up at 7 AM to clock our 4 miles for the day. Despite his determination to WALK the last mile, we managed to finish. That dog gets pretty slow at the end and must pee on EVERYTHING. ughhh.

After the run, Levi went back to bed and I headed to the gym for bodypump. I had a great class, came home and showered and was ready for my day with the mother-in-law. Alan stayed home and slept/watched sports/played video games I'm sure.

First, we went to get pedicures. Boy did I need one. Then we ate lunch. Flatbeard pizza and half a salad. Yum! Next, we went to Costco, one of my all-time favorites. That place is a zoo; I could spend hours there easily. I had to get a new membership (Alan's had expired) and pick up some gatorade and laundry soap. Exciting!

We wandered into TJ Max and Ross but left both places empty-handed. I picked up some new shampoo at Ulta and we headed to "a real store," The Limited! I got 3 shirts and 2 tops for work. All so cute! After we had the outfits, we needed to complete them with... duh, shoes! DSW was calling me name! There I got a pair of nude pumps. We met the hubbies for dinner (Mexican of course) and called it a day a great day. I love spending time with the MIL and am so grateful that we get along so well. Love her!

SUNDAY

Alan had a game at 10 AM so church was out of the question. I got to sleep in, though, and it was much needed. Alan didn't want me to go to his game b/c a repair man was supposed to come and fix the fense in the morning. He didn't come until well after Al was home. Figures!

When I got up I ate (cereal with almond milk. If you haven't tried almond milk, you haven't lived. It's ah-mazing-ness.) and then I got on this cleaning kick and didn't stop until the entire house was spotless. ahhh, cleaning bliss!

The rest of the day has been spent relaxing, napping, and snacking. Now, I'm about to start dinner for the night, homemade pizza! It's my third attempt... the last two have been far from perfect, BUT third times a charm, right? Wish me luck.

I made it one year!

Today started off a little earlier than normal, about half an hour to be exact! I got up and ready for work and had plently of time to wash a few dishes, make a lunch and a yummy strawberry and blackberry smoothie, and drop off our dry cleaning before work. Whew! Productive queen, right here!

Lunch looked something like this.

[Salad contained greens, celery, cucumber, carrots, broccoli and grilled chicken. I ate it with an oil olive based dressing..bliss!]

By lunchtime I was still full from this morning's smoothie, but I "managed" to tackle my salad and a small energy bar I brought for home. (Has anyone else tried those Larabars? Pretty tasty!) For some reason, my salads seemed extra big today meaning I definitely got my fruits and veggies fix for the day. Score!

While I ate, I did some blog reading and ordered these puppies from Half Price Books.


I read the first book in the series while the hubs and I were vacationing in the Dominican Republic. Much to Alan's dismay, I couldn't put it down! What's better than a love story with 4 best friends and wedding aspects? Not much I tell you! (well... maybe a homemade chocolate chip cookie smothered in peanut butter, but that's a different story ;) )


This afternoon I went to stretch my legs and check my work mailbox. I had this:


Has it been a year already?? Whew, time flies when you are having fun. Or, just really busy! It's funny how time goes by so much quicker when you are not living on a semester by semester basis and there's no homework, tests or projects to complete. I've taken full advantage of leaving work and everything it entails around 5 PM and not looking back until 8:30 the next morning. It's glorious!

Well, tonight's plan is less than exciting. After work, I'm going straight to the gym to get my 'pump on. After bodypump, I might stay and get in my cardio at the gym. It's so hot outside! How do we stand this?! For dinner, meal #2 on my list, I'm making baked talipa with brown rice and zucchini. A snack size snickers (or two!) may find it's way to my mouth also. ;)

I'm thinking the hubs and I get a video on demand off the TV and call it night. Please contain the excitement!

PS- I hear lots of rain is in the near future. Bring it on!! I'll even postpone Levi's bath for it! Too bad my books won't be here by this weekend. That would have been the icing on the cake!

Budget is not my middle name

Today wasn't quite as eventful as yesterday but it was a good one, though.

When my "early" alarm went off this morning, I COULD NOT get out of bed (even after going to bed quite early the night before). I took that as a sign that my body needed the extra hour or so of sleep. ;)

I made it through the day at work. In fact, the day was quite productive and went by a decent pace. Speaking of work, I do have some news to share. We finally posted a new marketing position online, which means.... I will not have to work so much this next year and that I will have some major help this season. Woooo hooo! I'm excited to be able to be more of a coach's wife and actully attend WC football games.

After work, I came home to make a very detailed grocery list. I planned out meals for 7 days and wrote down all the ingredients for the meals plus those for some yummy lunches and breakfasts. I made a budget in my head and headed to the store. As I went I calculated how much I putting in my cart. It was exhausting and once I reached my budget, I quit keeping track. Apparently, my budget was NOT realistic. Boo. I don't think I'll add everything up next time I go to the store unless Alan goes with me. Too much for one person!

For dinner, day #1 of my meal list, I made spicy chicken stir fry and egg rolls (I actually cheated and just bought these to throw in the oven.) Recipe courtesy of and Sam at Faith, Food and Fitness

Ingredients:

1 teaspoon sugar
1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
1/4 teaspoon cayenne pepper
1 pound boneless, skinless chicken breast tenders, cut into 2-inch pieces (see Variation)
1 tablespoon canola oil
1 16-ounce package frozen bell pepper and onion mix

Preparation:

1.Combine sugar, paprika, salt, pepper and cayenne in a medium bowl. Add chicken and toss to coat. Cover and refrigerate for 15 minutes.

2.Heat oil in a large nonstick skillet over high heat. Add pepper-and-onion mix and cook, stirring occasionally, until the vegetables are soft, 5 to 7 minutes. Add the spice-rubbed chicken and cook, stirring, until no longer pink in the center, 3 to 5 minutes. Serve hot. Variation: Make Stir-Fried Spicy Beef by using 1 pound of stir-fry beef or thinly sliced top round steak instead of chicken in this dish.



I thought it was pretty average, but still good. Definitely, cured my chinese craving and saved me hundreds of cals! Good thing since I didn't hit the gym today.

We all scream for... fro yo!

I meant to update yesterday, but by the time we got home last night I was exhausted. I literally showered and went to bed. When did I honestly get so dang lame? Anyhow, let's recap on my day yesterday, shall we?

Yesterday started off in my favorite way: 6 AM yoga(practiced in the hubby's man cave. muahahaha!) I just love this new DVD I got and, although, I prefer being in a studio with an actual instructor, it's simply easier to climb the stairs of my own house than to get in the car and drive to the gym when it's still dark outside. (Is that even natural?)


After I was "zen" and all stretched out, I showered, got dressed for work and made myself a big ol' smoothie for the road. I've been really into smoothies lately. Something about the sweetness and coldness is so satifying on a summer morning. I also love how easy and portable they are! Good stuff.

Work was.. well, work. Although, it did go by fast. After work I headed home to change into my workout gear and rushed out the door to the gym to tackle one of my favorites, spin class. Boy, was it a doozy and by the end I was schweaty! I absolutely love those kinds of workouts.

After the gym, I took one of my famous "Stephanie Rinse-offs" and Alan and I headed out to meet his grandparents for dinner. We ate at Zios; can you believe I've never been to that place? Alan and I gobbled down one of their yummy bread leafs with olive oil and basil and then I ate inhalled a big grilled chicken salad with more olive oil. YUM! :)

I love seeing the grandparents and I am glad get to so often. We need to start making dinner dates with my grandparents too! Somehow our conversation always ends up on football or baseball. Go figure! Can't complain, though. As a Coach's wife, I can handle it.

As satisfying as dinner was, we both had only one thing on our mind as we left... ice cream. In fact, Alan and I did one of those "are you thinking what i'm thinking?" deals as we got into his truck and yes, we were both thinking ice cream! Score! We headed towards Coldstone, but decided fro-yo sounded even better. We ended up at Orange Leaf (along with all of Churchill and Reagan HS.. haha). I've talked about orange leaf on here before, but let me remind you.. it is amazing! It's a self serve frozen yogurt joint with all the flavors and fixin's you can image (which in my case, is VERY dangerous!!)

I decided on a triple threat: Peanut butter, Cookies N' Cream and confetti cake (a little random, I'll admit) fro-yo combo. I then added my all my favs: reese's pieces, strawberry, brownie, butter finger, and chocolate chips until it looked like this.


Alan went the "heathly" route and pilled his with walnuts, strawberry and blackberry.


By the time we got home, I'd emptied my cup. Alan finished his soon after.
It's a good thing I did that spin class!
